How to make spaghetti
You can actually make basic pasta very simply, almost as easily as going out to the shops to buy the horrible dried stuff.
You need to start with 1 egg, 125g of flour (I’m using white flour and semolina mixed), a pinch of salt, and a drop or two of water.
The real trick is that you need a pasta machine, otherwise rolling and cutting is quite difficult.
Mixing and kneading the ingredients to make a dough:

Now we bring out the pasta machine and roll out the dough, running it through successively thinner settings to make a longer and longer sheet of pasta:

Then we use the cutting tool to make spaghetti:

The quantities listed above make enough for about two people.

Update: Arrabiata! I used some of the parsley from our garden, and a few leftovers from past meals, so it’s not strictly like an arrabiata - it’s got sausage meatballs from the pizza for starters.

Pasta is absolutely so easy to make, but you will need a pasta machine
, otherwise it takes hours to roll it out flat and cut it up into strips. (But that’s what Italian mamas do all day …)
There are lots of different recipes to make pasta. I have one which involves using 8 eggs! When I tried to make it though it was far too sticky to go through my pasta machine so it was a bit of a disaster. You can even make pasta without eggs - I imagine it must taste like bread.
You can also add things to the dough - commonly they add olive oil or pesto. The recipe I used in the main article tastes a bit like egg noodles because it is a very plain pasta with nothing added.

Pasta without eggs would be Soba or Udon, I think.
Probably, you need to use a different sort of flour, otherwise adding water and a pinch of salt. As you can guess it would be less sticky than pasta dough, so it would take more time to knead a dough enough…. That’s Japanese craftsmanship, mamma!
