Beetroot soup with feta, and lemon chicken

Beetroot soup with feta cheese (from Hugh’s River Cottage book).

I’m not really a fan of beetroot, having been forced to eat it as a kid. This was ok - would have worked better as a chilled gaspacho-type of soup.
The lemon chicken, from the 1970s cookbook, is really fantastic. And easy to make.

I loved the chicken-chan!had two legs actually…
mmmmm tasty!quite lemony but went well with chicken and sweetness from the onions.
The beetroots soup,presentationwise,yes it’s lovely,strong red and white and green from parsley,it catched my eyes straight away.
However,it would’ve been better if it’s hot or cold,nothing between like today.
Anyway,can I have some more,please!
