    I guess,because he just simply used white wine and garlic,without butter and lemon. Taste lovely as ever,I was going to drink the soup up after all.

    Whenever you want. Mussels are cheap & very easy.

    Clams and mussels are very closely related. In fact “clam” may even be the US name for mussel, I’m not sure.
