This is a Gordon Ramsey recipe from a calendar, and to be honest it was rather unsatisfying… because it’s real vegetarian food. You eat it and then 20 minutes later you feel hungry.

I may not be able to take a good photo, or perhaps I can not lay out the food to catch the eye, but the taste really is unparalleled.
For this one I made chips in the usual way.
For the steak I sizzed it on both sides very hot to get the Maillard reactions working, then put it in a cool oven for ten minutes, and rested it for another ten. I made the sauce by adding to the juices a little white wine vinegar, single cream, worcestershire sauce, lots of pepper and some peppercorns, masala wine, and more juices (after the rest period).

Served with beefsteak tomatoes and salad.

Mash: good, carrots: good, chicken breast: dry and tasteless.
Moral: stop wasting time cooking chicken breast. It’s tasteless (even this UK-produced free range bird) because there’s no bones in there. Two days ago I cooked a lamb shoulder for 5 hours. That lamb cost one third as much and tasted far better.
This prompted a small WTF moment when I was in the supermarket today:

Currently, there are no hits on Google. So as far as I know, this was invented by someone at my school. I don’t know his name, but this aide-memoire has helped me on many occasions.
(Unfortunately Oxidation is Loss, Reduction is Gain (OILRIG) which was also claimed by a classmate of mine, turns out to be rather more commonly known.)
