We have a veritable forest of thyme and oregano growing in the garden at the moment. What can we make?

I went to see the lovely umenana who lives in a scary flat in north London. She used to live with a Bangladeshi family, and they taught her to make a mean chicken curry. Lovely coconut milk and fragrant pilau rice:

I took along my home-made mango chutney, and made poppadums and onion bhajis.
