Falafels
One of my favorite Middle-eastern foods has to be falafel. This is based very loosely on a BBC recipe but the recipe itself is wrong in several ways, most particularly you need to add a fair bit of flour to make it stick together. Also leaving out the baking powder is probably worthwhile.

Of course I can make it. But it’s very simple to make it yourself too.
Here is a basic recipe, vary it according to your taste:
1 or 2 tins of cooked chickpeas
1 teaspoon ground cumin or cumin seeds
1 teaspoon ground coriander
1 teaspoon of chilli flakes, chilli powder, etc.
1 garlic clove, crushed and chopped
fresh coriander
about 1-3 tablespoons of flour
Drain the chickpeas. Mix all the ingredients (except the flour) and mash them up with a potato masher, or use a blender (or a fork, but that takes ages).
Then add some flour so that the falafels stick. (You should add enough flour to make them stick together while frying, but not too much). Roll them into small balls as in the first picture.
Deep fry them 3-4 minutes in hot oil.
Serve with warm pitta bread, salad, greek yogurt, lemon, etc.
You can use other basics instead of chickpeas, for example gram flour (which is pre-ground chickpeas) or other beans such as broad beans or soya beans.
