M-kun, I made the chicken kiev … it’s so easy you could too:
(1) Mix up a knob of butter, some garlic and some random herbs. Keep it cold and hard, as much as possible.
(2) Take a chicken breast (organic, from the supermarket). Usually they have a “pocket” in them already, but if not then take a sharp knife and carefully cut one.
(3) Stuff the garlic-herb-butter into the chicken breast pocket.
(3b) In this meal I also added a small piece of bacon into the pocket, but it’s totally optional.
(4) Coat with honey-panko using the usual method, ie. dip in beaten eggs — flour — more beaten eggs — honey panko
(5) Shallow fry for 20-25 minutes in oil at a medium heat.
Easier than going to the shops, ne?
The purple mash was just ordinary mashed potato made with the posh “salad blue” potatoes from Waitrose.
